Banoffee cupcakes
For cake
150g self raising flour
125g caster sugar
125g margarine
2 eggs
3 over ripe bananas (mashed)
1 tsp baking powder.

For the filling
60g Dulce de leche
150g icing sugar (golden if possible)
75g butter.
Whisk the eggs and sugar,
Bit by bit add the flour, baking powder and then the butter,
Whisk until smooth and add the banana whisk again until everything is combined,
spoon in to cakes cases and bake for approx 15 mins.
While they cook/cool, beat the butter and icing sugar until you get a smooth mix, fold in a table spoon of the dolce leche.
Top cakes with the butter icing mix and the remaining dolche leche.
Decorate with a dried banana and chocolate shapes if you wish.
Chocolate Mallow Fudge
125g butter
1 can of condensed milk
2tbsp golden syrup
250g caster sugar
200g biscuit crumbs
75-100g mini marshmallows
200g white chocolate (melted)
Heat the butter, milk, syrup and sugar in a heavy based pan, stirring constantly and bring to the boil.
Boil for 7-8 mins until thickened.
Remove from heat and stir in biscuits.
Pour into a tray and press on the marshmallows while the fudge is still warm.
Melt the chocolate and pour over mallows and fudge mixture.
Put in the fridge to set.
Chocolate Whoopie Muffins
35g cocoa powder
300g plain flour
1tsp baking powder
1tsp bicarb of soda
1 pinch of salt
100g unsalted butter
175g dark brown soft sugar
1 egg
1tsp vanilla extract
125ml milk
25g white chocolate chips
25g dark chocolate chips
For the filling
100g white chocolate chips
140g butter
140g icing sugar
50g milk chocolate chips
Sieve together the coca, flour bicarb of soda baking powder and salt.
In an other bowl cream butter and sugar.
Beat in the egg to the butter mix.
Stir together the milk and vanilla extract,
Add the cocoa mix to the butter mix alternating with the milk mixture beating until smooth.
Fold in the chocolate chips.
Put in cases
Bake for approx 20 mins.
For the filling
Melt half of the white chocolate and leave to cool.
Beat butter and icing sugar until creamy,
Add the cool melted white chocolate
Beat in half the milk chocolate chips
Cut each muffin in half and fill with the white chocolate cream mixture
Melt remaining chocolate and drizzle over the sandwiched muffins.
